Uncle Lee's GF Pecan Pie



Deb just agonized over how, when, and what to blog in here, so this innagural post is going up by me, her husband Scott.
Lee (Deb's brother who also eats GF) brought a truly excellent pecan pie to the Christmas celebration at her mom and dad's house. Our boys (both of whom need to eat GF) loved it.

The recipe is adapted from the Karo corn syrup recipe- here's how he made it:

1 cup Agave nectar
1 cup organic sugar
dash of vanilla flavoring
3 eggs
2 Tbs melted Earth Balance margarine
1 and 1/2 Cups of pecans .
Preheat oven to 350 degrees. Mix first five ingredients together then add pecans and stir. Pour all of this into a prefab Gillian's pie shell. Bake for 55-ish minutes. Allow
to cool completely.... yum!

(The Gillian's Pie Shell is not Dairy-Free as of this writing, but could easily be substituted with another pie crust to make this recipe dairy-free.)
